One of my favourite homemade meals is pea and bacon risotto. This dish is so tasty, moreish and easy to make as well. Here’s how to make homemade easy peasy pea and bacon risotto:
Ingredients to serve 4 people –
300g risotto rice
1 litre vegetable stock
6 rashers bacon
1. Finely chop up the onion, heat a pan and add 2 tablespoons of oil and add the onions into the pan for a few minutes. Next chop and add the bacon to the pan and cook until it starts to crisp (around 4-5 min).
2. Put the stock, boiling water and rice into the pan and bring to the boil. Cover the pan and cook for 17 minutes stirring occasionally.
3. Stir in the amount of peas that you want and cook for a further 3 minutes until the peas are cooked. Add salt and pepper to taste.
4. Serve the risotto with black pepper.
This dish is delicious and very homely! The worst part is the washing up but thankfully we have a dishwasher to do the dirty work.
